Lemon Crab



Crabs                                                     6

Medium size lemon juice             6

Crushed garlic                                    45 g

Crushed ginger                                                 35 g

Finely chopped thyme                   35 g

Finely chopped parsley                 35 g

Chopped onions                               150 g

Sugar                                                     10

Vegetable oil                                     65 ml

Salt and ground black pepper




Clean the crabs. Remove claws and crack the claws on both sides. Cut the main fleshy parts in quarters.

Mix lemon juice, 15ml of oil, ginger, sugar, garlic, thyme, parsley and seasoning.

Pour over the crabs, mix well and keep in a cool place.

Heat 45ml of oil, add onions and stir until soft, add crabs and marinade sauce, then stir for 3 minutes. Add water and season. Cover and cook for 15 minutes. Serve with rice salads or chutney.
